Microgreens are young vegetable greens harvested just after the first leaves develop (7–14 days). Unlike sprouts (which are germinated seeds eaten whole), microgreens are grown in a medium and only the above-ground portion is harvested. They have significantly higher nutrient density than both sprouts and mature vegetables.
